Life changes fast! (why I’ve been MIA)

So yeah, I kind of went Missing-in-action for a few weeks there…Yikes! maybe even over a month! Sorry about that… But believe me, I have NOT been sitting on my bum, watching chick-flicks and eating chocolate (OK maybe a little chocolate…). A LOT has happened in that month+ time!

…In short: My husband got a job offer, we found a house to rent (at an affordable price. in the area we wanted!), packed up everything we owned into a moving truck, said many a “good-bye”, gave even more hugs, and we moved from PA to GA! …In 3.5 weeks! Yeah, that pretty much sums it up! Crazy, huh?

Suffice it to say that after years of praying. seeking. and searching for where God wanted our family, and too many job applications to count, God opened up the door of our dreams, and we finally feel at peace that This is where we are supposed to be! Can I tell you how GOOD that feels?! REALLY good!!

Those 3.5 weeks are pretty much a blur to me now, but I know one thing for sure; We have some *amazing* friends in our life, and we never would have gotten everything done without their generosity and help! If you are one of those friends- THANK YOU! From the bottom of my heart! We will miss you so much!

I could go on and on relaying our entire life story leading up to this point, and maybe someday I will, but not today.

For now, I just want to say how incredibly blessed I feel! We are now half-way between and MUCH closer to both families, and in the same town as some life-long friends! My God is AWESOME!

Lacto-Fermented Salsa Recipe (As promissed)

Over the past 2 years, I have been (slowly) taking baby-sized steps towered a more tradition food diet, as described in the book- Nourishing Traditions. Many of the “changes” have come easily. Cutting out the overly refined, packaged and processed foods just made sense. I didn’t have a problem switching over to healthier fats and cooking oils, and soaking my grains, though it took a little more fore-thought, wasn’t all that hard or crazy sounding…but the thought of fermenting something sounded, well, scary! But guess what? I was so wrong! It is soooo EASY!

No, really! It IS!

But first, What is it?

Lacto-Fermentaion is a traditional form of preservation, used by our ancestors before modern methods (such as canning) existed. Not only is it a great way to preserve food, but it actually enhances it’s nutritional value, and offers a wonderful source of probiotics. As a fellow blogger explained it so well;

Lacto-fermentation is the process of cultivating lactic acid as a natural preservative to prevent putrefication. Starches and sugars in vegetables and fruits are converted to lactic acid by the many species of lactic-acid producing bacteria. Change of plans and our “staycation”

So we didn’t end up going to the beach this past weekend as planned. It decided to to rain all-week-long! and the idea of driving several hours, only to be stuck indoors for two days, with two elderly people (not to mention lots of pretty, breakable items), AND two very active little boys, did NOT sound appealing to me! I mean, I’m sure Grandpa would have been happy to see us, but I would like to be welcomed back someday… 😉

Anyway…We had a nice, relaxing few days at home. We tried to make it fun by doing special things with the boys. Like making/playing with “slime”, baking brownies, and going for walks in the rain (that wasn’t on purpose, but it was fun!).

Wednesday night we took the boys to see Cars 2 at the movie theater. For some reason we only ended up paying for one adult ticket. Bryce tried to question it, but the young man running the ticket booth assured him he was right. I still think he messed up, but hey, $7  for all 4 of us to see a movie? I wont argue! Not only did we get a good price, but we had the entire theater to ourselves! Kinda nice to not have to worry about the baby making noise, or the toddler asking “What’s that daddy?” over and over again… and BE especially liked getting to pick where he wanted to sit… and then moving 5 different times before we decided he was getting a little too adventurous and made him sit with us again.

Thursday I got to go visit my friend, Ruth, and her newborn baby boy in the hospital. He was only 13 hours old. ❤ Can you say “precious”? You better bet I stole a few snuggles while I was there (and she thought the Starbucks was just a nice gesture  😛 ). The Last Days of Summer…

How is it already September? Fall is right around the corner, and as much as I’m looking forward to all the fun and beautiful things it has to offer, I’m savoring these last few warm days of summer! I’m learning to appreciate the change of seasons, really I am! but I’ll always be a Southern girl at heart, and with that comes a love for summer and all that it entails…

…Like our garden. We grew LOTS of tomatoes this year! 14 plants worth to be exact, that stretch 25 feet long and 5 feet wide! My hubby calls it “the hedge”. We didn’t really intend to grow that many plants, but as we divided that little pack of what we expected would be 6-8 baby plants, there were 14! and seeing as we were completely UN-successful last year, we decided to plant them all, in case some died…Well, I’m here to say they ALL lived, and they are all HUGE! It has been such a blessing though, as we’ve been making and canning sauce to be used in soups and stews this coming winter. I also decided to try my hand at making a lacto-fermented salsa- a first for me, as I had never LF anything, or made salsa before! It was so easy, and turned out really yummy! (Recipe to come ;-)).

…And our tiny Farmer’s Market held each Saturday morning. This is the first year they’ve had one in the small town we live in, and there are usually just one or two farmers and their tents, but I love it! I wasn’t sure how the “planner” in me would cope with the spontaneity of it all. You know, everything being sold is in season, so most weeks it’s a total surprise what you’ll find. but I’ve actually found it quite fun! Like this week they had apples! Continue reading

Grain-Free Granola

This is my latest creation. Yes, I realize “grain-free” and “granola” are not often seen together, and to some it would seem like an oxymoron.. But it really is very tasty! Not to mention, a great alternative to traditional granola or other cold cereals. Especially when embarking on the GAPS diet (as my family is), and/or trying to limit or eliminate grains from your diet. It makes for a wonderful and quick breakfast or snack!

Try mixing and matching different nuts and seeds. I would imagine that sesame seeds would make for a great addition. I just didn’t have any on hand.

Combine:
1 1/2 C. Sliced Almonds
1 1/2 C. Chopped Walnuts
1 1/2 C. Shredded, Unsweetened Coconut
1 C. Pumpkin Seeds
1 C. Sunflower Seeds (unsalted is preferred)

Melt over low heat until warm and thin:
1/2 C. Coconut oil or butter (maybe less?)
1/2 C. Honey

Rise and Shine, and Give God the Glory!

The past few weeks, sleep has been scarce. CJ has been cutting teeth, which means he’s been nursing pretty much non-stop through the night! and I’ve. Been. Tired! The other night was no exception.. In the early morning, around 6:30, while changing a diaper (because with all that nursing comes…wet diapers!), I made up my mind- As soon as I finished, I was going back to bed, and if the boys woke, I’d make my hubby get up with them! Great attitude, huh? Never mind the fact that, this being his only day off work in over a week, I would be robbing him of his only opportunity to sleep in…no, we wont go there!

So I finished nursing CJ, and changing his diaper, then laid him back down sleeping once again. Then, for whatever reason, while up to toss the dirty diaper in the diaper pail, I grabbed my phone to check my emails. (I have no idea why! but God does… ;)).

In my inbox, I found a blog post waiting for me from Stephanie @ Keeper of the Home. The title read- “So, mornings…How are they going for you?”. Well obviously this caught my eye. I started reading it… and I started feeling convicted… The content was all about the “Hello Morning’s” challenge, a ministry geared towards moms, helping to “Maximize Your Morning’s” by rising BEFORE your children, in an effort to jump-start your day with scripture and prayer.

It’s about time!

I did it! I started a blog!

I’ve had this idea of blogging in the back of my head for months, er, years now! …but for some reason, I never got around to it… I think I was waiting for the “perfect” time to start, but I’ve come to realize– there is no such thing as “perfect”, is there? Anyway, I’m here now!
