Grain-Free Granola

This is my latest creation. Yes, I realize “grain-free” and “granola” are not often seen together, and to some it would seem like an oxymoron.. But it really is very tasty! Not to mention, a great alternative to traditional granola or other cold cereals. Especially when embarking on the GAPS diet (as my family is), and/or trying to limit or eliminate grains from your diet. It makes for a wonderful and quick breakfast or snack!

Try mixing and matching different nuts and seeds. I would imagine that sesame seeds would make for a great addition. I just didn’t have any on hand.

Combine:
1 1/2 C. Sliced Almonds
1 1/2 C. Chopped Walnuts
1 1/2 C. Shredded, Unsweetened Coconut
1 C. Pumpkin Seeds
1 C. Sunflower Seeds (unsalted is preferred)

Melt over low heat until warm and thin:
1/2 C. Coconut oil or butter (maybe less?)
1/2 C. Honey

Add:
1 tsp Pure Vanilla
1/4 tsp Sea Salt (Approximately. Less if using salted seeds)

Pour honey mixture over nuts and seeds, and stir until evenly coated.
Bake on parchment lined baking sheets, in a 350 degree oven, stirring every 5-10 minutes until toasted and dry. Approximately 30 minutes. Be careful not to burn!

Once cool, add:
1 C. Dried Fruit (maybe more. I can’t remember).

Store in refrigerator. Serve with milk or yogurt. YUM!
